Chicken Avgolemono Soup (Greek Lemon Soup)
Soups in Winter, especially for Post-Natal care are nourishing, healthy and yummy! Here is one of my favourites!
🥣 Chicken Avgolemono Soup (Greek Lemon Soup)
Brown some olive oil and garlic (and onion if desired) in a pan.
Add 3L of Chicken or Vegetable Stock (your choice)
Bring to the Boil
Reduce heat
Add 1.5cups medium grain rice and simmer until rice is tender (15/20mins)
Debone and shred a large whole cooked chicken (I grab a cooked chook from the local chicken shop).
Whisk 4 eggs and 80mls of Lemon Juice (1 x large or 2 x small lemons) together in a bowl.
Gradually add 1 cup of the cooked hot rice mixture to the egg and lemon mixture bowl and whisk to combine.
Add that mixture back to the main pot whisking constantly.
Add the shredded chicken to the soup mix and stir constantly for a few minutes until the soup thickens.
